Howard Mercer - Civic LeaderLEVELLAND - A Lubbock civic leader, Howard Mercer, was presented Rotary International's prestigious Service Above Self Award during the District 5730 Assembly in Levelland on May 22.

The award, presented to just 150 Rotarians world-wide, is in recognition of Mercer's long-time commitment to alleviating hunger both locally and globally. He is the recipient of one of seven awards presented in Texas this year and the only one in Lubbock.

Mercer, a long-time volunteer and board member of the South Plains Food Bank, is the charter chairman of Breedlove Foods, Inc., the operator of the Breedlove Dehydration Plant.

He was also instrumental in the planting and establishment of the Apple Orchard, which provides fresh apples to hungry people on the South Plains.

A member of the Southwest Lubbock Rotary Club since 1982, he went on the board of the food bank in 1990.

The founder and president for 42 year of West Texas Optical, he retired and closed his business, which had seven retail outlets, in 1992, giving him more time for volunteer service.

Mark GriffithDehydration is a process where water is removed from a product.  Water is removed until microbiological life cannot sustain itself.  At that point the product is said to be preserved.  If microbiological life cannot exist on the product, then the product may be safely stored for long periods of time.

To accomplish dehydration requires two parameters.  The first is heat so the water may change from a liquid to a gas.  This occurs at the surface of the product. The second is air flow so the gaseous water molecules may be carried away from the product.  When you think of dehydration, think about heat and air flow.
